Ingredients
- For the chicken puff pastry recipe:
- 1 Shortcrust
- 400 g Chicken breast cut into sticks
- 50 g Green olive, pitted
- 300 g Cubed feta cheese
- 3 Egg
- 200 g Cottage cheese
- 2 Tbsp Mustard
- 10 cl Milk
- 3 strands chopped mint
- 4 Tbsp. Olive oil
Preparation Method
1. Start this chicken puff pastry recipe by lightly oiling a 26 cm pie dish. Spread the puff pastry (or broken pastry) in the dish, going up well on the edges, then prick it with a fork. Film it and keep it cool.
2. Prepare the garnish. In a frying pan, heat the olive oil over medium heat and cook the chicken breast for 4 min until golden brown. Season with salt and pepper, then leave for another 1 min. Remove from the heat and add the olives and feta while stirring.
3. In a bowl, combine the eggs, mustard, cottage cheese, milk, fresh mint, salt, and pepper and emulsify with a fork. Pour the mixture into the pan with the chicken, stir.
4. Preheat the oven to 180°C (th. 6). Remove the film from the dough. Spread the filling in the center. Let the chicken puff cook for about 50 min, until the dough is golden brown.
5. Serve hot at room temperature with a tomato salad.
